Bean Blossom is a decorative purple flower with a sweet bean flavour. The flower has a crunchy bite at its heart. The young, immature tops are cooked and eaten like green beans. The young leaves go raw in salads; the full-grown leaves are eaten cooked like spinach. The flowers are eaten raw or steamed.
