

Sword beans


Sword beans are not easily encountered in the Netherlands. These giant beans are pods as much as 40 cm long and 5 cm wide. Only the pinkish-red pods inside are edible. In China, the large legumes are also known as magic beans. They are given as gifts with a New Year wish engraved inside. Fresh sword beans are best stored in the fridge.

Storage
Store fresh pods in the fridge (about 3 days).
Store dried pulses in a dry place.
Preparation
Sword bean pods are best soaked overnight before cooking. Discard the soaking water.
The pulses contain a toxic substance that becomes inactive with cooking.
