Yam is a root tuber that is an important staple food especially in Africa. The name yam comes from the African 'yamyam' meaning food. The skin is brown with hair-like root shoots. Yam has a flavour somewhere between potato and sweet potato. In Africa, yam is often made into flour. It is best to store yam in a dry, dark place.

Storage
In a dry dark place, yam can be stored for up to six months. Yam does not need to be refrigerated.
Do you have any leftover cooked yam? You can keep it in the fridge for 2 days or in the freezer for 3 months in a sealable container.
Preparing
The brown, firm outside should be peeled. As yam is very hard, this is quite difficult. Tip: Try cooking yam in its skin first and then peeling it. Heating will soften the skin and make it easier to get it off.

Yam takes longer to cook than potatoes (= approx. 20 minutes). Prick it with a fork to check whether the yam is cooked.
