


Taro



Taro´s are root tubers that can grow up to 4 kilos. They are white, grey or pinkish brown to bluish purple. Cooked, taros have a flavour somewhere between potato and carrot. Pureed, taros are much creamier and more salty than potato. Besides the root tuber, you can also eat the young leaves and petioles.

Taros can be stored in the refrigerator for about a week.
How do I know if taros are no longer good? If you can squeeze them a little or if they feel 'gummy' they are old.
Preparing
Scrub the taro clean under the tap. Peel the taro with a peeler.
Note that, as with salsify, the flesh can cause irritation.
You can boil, roast, fry and deep-fry the tubers. You can also eat the young leaves and petioles.
