


Amsoi



Amsoi consists of light green, rather rough leaves. The leaves resemble those of turnip greens, but larger. The flavour is a touch bitter and spicy. Logical, as amsoi is related to the mustard plant. Amsoi is often used in Surinamese dishes. Soi means vegetable in Chinese. So is Paksoi.

Storage
Amsoi will keep for several days in the fridge.
After blanching for at least 2 minutes, you can also store amsoi in the freezer. In a well-sealed plastic bag or container, it can be kept for up to 12 months (at a minimum of -18°C).

Wash the leaves, drain well and cut into strips.
Storage times
Refrigerator: 3-4 days
Deep-freeze: 12 months
Preparation times
Cooking: 8-10 minutes
Stir-frying: 5 - 7 minutes
Microwave oven: 4 - 6 minutes
Braising: 7 - 8 minutes
Steaming: approx. 15 minutes
