Paksoi is a variety of cabbage native to Asia. It is a leafy cabbage with non-closing leaves. This leafy cabbage has crisp, white stems and veins and large dark green leaves. Paksoi does not have a typical cabbage flavour, it rather tastes somewhat spicy.

Storage
Store pak choi in the fridge. It stays good for 2-3 days if wrapped in an open plastic bag. Sliced pak choi can be kept in the fridge for 1 day.
How do I know if pak choi is no longer good? Pre-cut pak choi becomes mouldy, limp or has a sour smell. You can quickly recognise this decay by looking, smelling or even tasting.
Prepare
Wash the pak choi stalks with leaves attached in plenty of water. Cut out the hard part of the stalk and then cut the stems and leaves into wide or narrow strips.
Cut the vegetables into wide strips if you want to cook/wok them. Cut the vegetables into narrow strips if you want to use them in a salad.
