Bamboo shoots or sprouts are the young shoots of the bamboo plant. Its flavour is fresh and crisp. In Eastern cuisine, it is widely used in vegetable dishes. Bamboo shoots are almost exclusively sold canned in the Netherlands.

Fresh bamboo shoots will keep for 1-3 days in the fridge. Canned, they can be kept until the expiry date.
Preparation
Remove the bracts from fresh bamboo shoots and cut away the hard underside and tip. Cut the bamboo into slices or strips.
