


Lemongrass



Lemongrass is a type of grass. Its Indonesian name is sereh. The stems have a fresh, lemony and slightly ginger-like flavour. Lemongrass is not eaten raw, but always cooked or stewed. If you cook sereh for flavour, the stem is used whole and removed before serving. The stalk can also be used finely chopped in dishes.

Lemongrass keeps for 7-10 days in the fridge.
You can also freeze fresh lemongrass. It will then keep for 6 months.

Use lemongrass whole
Chop the lower thick and softer part of lemongrass very finely.
Boil lemongrass for flavour
Crush the stalk with the side of a knife. This will release the flavours. Stew the stalk with the lemon grass. Remove the stem from the stew before serving.

Deep-freeze: 6 months
