


Lemon thyme



Lemon thyme does very well as a ground cover or in a pot on the balcony. The fragrance is spicy and lemony. The small leaves are a delicious seasoning for stews, for example. You can use lemon thyme both fresh and dried. The flavour is strong, so use lemon thyme sparingly.

Storage
Sprigs of lemon thyme are best kept in the crisper section of your fridge, where they will keep for a few days.
You can cut some from a plant on the windowsill if you need it.
You can also dry the sprigs. Then you will have lemon thyme available all year round. Dried lemon thyme keeps for a long time.
Drying is done like this:
- Spread the leaves on a clean (dry) tea towel.
- Turn them over occasionally.
- Can you crumble them? Then they have dried. This can take about 2 weeks.
- Store the leaves in a sealable jar or container. Store in a cool, dry and dark place.
Prepare
Unzip the leaves from the sprigs. Wash the leaves.
Crush the leaves briefly to release the aroma easily.
Add the leaves as early as possible during cooking to allow the aroma to penetrate.
