


Lemon balm



The leaves of lemon balm are soft, heart-shaped and light green in colour. The leaves resemble mint leaves, but are much smaller. Lemon balm smells strongly of lemon. When used in a dish, they give a fresh lemony flavour. Add lemon balm to a dish or drink just before serving.
Preparation & storage
Store
Put lemon balm in a glass of water or store it in cling film in the fridge. The herb will keep for a few days this way.
Lemon balm can also be frozen or dried.
Freezing is done like this:
- Wash the lemon balm.
- Pat the lemon balm dry with some kitchen paper.
- Wrap them in sandwich bags.
- Then freeze them immediately.
Drying is done like this:
- Spread the leaves on a clean (dry) tea towel.
- Turn them over occasionally.
- Can you crumble them? Then they have dried. This can take about 2 weeks.
- Store the leaves in a sealable jar or container. Store in a cool, dry and dark place.
Prepare
Rinse the lemon balm under the tap and drain or pat dry. Add the leaves just before serving. Do not heat the leaves, or the delicate lemon flavour will be lost.

Refrigerator: 2-3 days
Freezer: 12 months
