Black beans are actually called black turtle beans. For convenience, we call them black beans. Black beans are very popular in Latin American cuisine. Black beans have a firm, meaty texture. The flavour is somewhat similar to mushrooms.

Storage
Store dried black beans in a cool, dry and dark place to keep them good for at least a year.
How do I know if dried black beans are no longer good? The beans are going mouldy or have sprouted. You can quickly recognise this deterioration by looking carefully.
Cleaning/preparing
Soak black beans for 8-12 hours and then cook them until tender in about 60-90 minutes.
Canned or bottled black beans can be heated without boiling.
It is better not to eat black beans raw. There is a natural toxin in beans, lectin. If you cook the beans, the substance is no longer harmful.
The amount of lectin varies from one type of bean to another. Kidney beans, soy beans and black beans contain more lectin than, for instance, lentils or chickpeas.
