Sinterklaas treat: Black bean brownie with tangerine

Ingredients
1 small tin of black beans (drained weight 130g) |
50g sultanas |
1 egg |
50g soaked plums |
35ml sunflower oil |
2 tablespoons cocoa powder |
1 heaped tablespoon of honey (approx. 20g) |
1/2 tablespoon baking powder (3 1/2g) |
2 tangerines |
Preparation
Did you know that you can also make brownies very well from black beans? Not only is that healthier, but also super tasty. These fun brownies with mandarin oranges are perfect for Sinterklaas Eve, so your children will get some sneaky fruit and vegetables as well.
Also needed: 7 silicone muffin tins and 7 (cheerful) cocktail sticks
- Preheat the convection oven to 175°C.
- Soak the sultanas in lukewarm water (at least 15 minutes). Then drain well and pat dry with kitchen paper.
- Drain the beans in a colander, rinse with water and drain well again.
- Mix (with a hand blender or food processor) the black beans, cocoa powder, egg, baking powder, oil, honey, prunes and sultanas into a smooth batter.
- Divide the batter among the muffin tins, counting about 40g per tin. Tip: you can use an ice cream scoop (tongs), about half a scoop per mould.
- Bake the brownies for 35-40 minutes.
- Remove the brownies from the oven and leave to cool well.
- Peel the tangerines. Prick 2 or 3 tangerine segments on cocktail sticks and insert into the brownies.
This recipe is enough for about 7 brownies.
