Sinterklaas treat: Mini apple cake with spiced nuts

Ingredients

| 1 small Elstar apple |
| 110 grams self-rising baking flour |
| 30 grams dark caster sugar |
| 1 egg |
| 75 grams sunflower oil |
| 90 grams semi-skimmed yoghurt |
| 10 gingerbread cookies |
Preparation
Add some spiced nuts to your apple cake, and you have a delicious Saint's treat. That way, your kids will sneak in some fruit on Delicious Evening.
Also needed: 10 (paper) muffin tins
- Preheat the oven to 170°C.
- Beat the egg in a batter bowl.
- Add the caster sugar, sunflower oil, yoghurt and baking flour to the egg. Mix or blend the mixture into a smooth batter.
- Peel the apple and cut into small pieces. Carefully spatula through the batter.
- Divide the batter among the muffin tins. Allow about 40 g per muffin tin. Tip: place the paper muffin tins in a muffin tin to help them keep their shape.
- Chop or break the peppercorns into quarters and press them into the batter. Repeat this step for each cake.
- Bake the cakes for 25-30 minutes until golden brown. After 25 minutes, check if they are done.
- Let the cakes cool well.
Good to know: Greasing paper moulds is not necessary, this recipe contains enough fat.
Cinnamon dip: It is delicious to dip the cakes in some cinnamon.
