Sinterklaas treat: Mini apple cake with spiced nuts

Ingredients

10 persons

1 small Elstar apple
110 grams self-rising baking flour
30 grams dark caster sugar
1 egg
75 grams sunflower oil
90 grams semi-skimmed yoghurt
10 gingerbread cookies

Preparation

Add some spiced nuts to your apple cake, and you have a delicious Saint's treat. That way, your kids will sneak in some fruit on Delicious Evening.

Also needed: 10 (paper) muffin tins

  1. Preheat the oven to 170°C.
  2. Beat the egg in a batter bowl.
  3. Add the caster sugar, sunflower oil, yoghurt and baking flour to the egg. Mix or blend the mixture into a smooth batter.
  4. Peel the apple and cut into small pieces. Carefully spatula through the batter.
  5. Divide the batter among the muffin tins. Allow about 40 g per muffin tin. Tip: place the paper muffin tins in a muffin tin to help them keep their shape.
  6. Chop or break the peppercorns into quarters and press them into the batter. Repeat this step for each cake.
  7. Bake the cakes for 25-30 minutes until golden brown. After 25 minutes, check if they are done.
  8. Let the cakes cool well.

Good to know: Greasing paper moulds is not necessary, this recipe contains enough fat.

Cinnamon dip: It is delicious to dip the cakes in some cinnamon.
