Sinterklaas treat: Carrot muffins with speculaaskruiden

Ingredients
10 persons
| 130g self-rising baking flour |
| 1 egg |
| 2 tablespoons honey (approx. 20g) |
| 120g semi-skimmed cottage cheese |
| 60ml semi-skimmed milk |
| 3 carrots of waxed carrots (approx. 60g) |
| 1 teaspoon speculaaskruiden |
Preparation
Oh, come and see what I find at my shoe, yummy carrot muffins from that good Saint.
Also needed: 10 silicone muffin tins (diameter bottom of tin approx. 5 cm)
- Preheat the oven to 170°C.
- Wash the carrots and grate over a batter bowl.
- Mix the egg, cottage cheese, milk and honey with the grated carrots.
- Add the baking flour with the speculaaskruiden and mix through.
- Divide the mixture among the muffin tins. Allow about 40 g per muffin tin.
- Bake the muffins for about 25 minutes. Check in between, every oven is different.
- Let the muffins cool down.
Serving tip: decorate with a spoonful of apricot jam and grated carrot.
Variation tips:
- There is no fat in this recipe, so silicone moulds are preferred. You can use paper muffin tins if necessary, grease them very well.
- Instead of speculaaskruiden you can also use cinnamon.
