Kidney beans are actually called red kidney beans in the Netherlands, but the English name is common. Kidney beans get their name from their shape (they are kidney-shaped) and have a reddish-brown colour. Kidney beans have a slightly sweet flavour. They can be eaten both cold and hot. It is best to store dried kidney beans in a cool, dry and dark place.

How do I know if dried kidney beans are no longer good? The beans are going mouldy or have sprouted. You can quickly recognise this deterioration by looking carefully.
Preparation
Soak kidney beans for about 12 hours and then cook them for about 45 minutes. Take at least 3 times the weight of the kidney beans in water, as the beans absorb a lot of water during cooking.
Kidney beans from a can or glass can be heated without boiling.
Kidney beans are best not eaten raw. There is a natural toxin in beans, lectin. If you cook the beans, the substance is no longer harmful.
