


Broccoli



Broccoli is a popular vegetable related to cauliflower, they are both recognisable by their flower buds. Broccoli consists of small green flower buds with thick stems, both can be eaten. The flavour is similar to cauliflower, but finer and spicier. Raw broccoli is rich in vitamin C and fibre.

Storage
Broccoli will keep in the fridge for 3-5 days. Store broccoli in the vegetable drawer of your fridge.
In a cool place outside the fridge, broccoli will keep for 1-2 days.
You can store broccoli in the freezer for up to 12 months at a minimum of -18°C. Blanch (heat briefly) raw broccoli first for 2-4 minutes shortly before freezing.
How do I know if broccoli is no longer good?
Pre-cut broccoli becomes limp, sour or mouldy. You can quickly recognise decay with your senses. So look, taste or smell well.
Prepare
Wash the broccoli and cut the bottom of the stem. Peel the stem to just below the florets. Cut the stem into slices. This way, the stem is cooked at the same time as the florets. Divide the rest of the broccoli into florets. Cook broccoli with little water al dente for about 3 minutes.
