Oriental broccoli salad with peanuts and rice

260gr vegetables p.p.
Ingredients
2 persons
500 grams broccoli |
2 spring onions |
piece of red pepper |
1 tablespoon lime juice |
1 tablespoon reduced-salt soy sauce |
150 grams brown rice |
50 grams unsalted peanuts |
1 tablespoon oil |
Preparation
The red pepper, lime juice and soy sauce add an oriental touch to this broccoli salad with peanuts and rice.
- Clean the broccoli. Divide the vegetable into small florets. Peel the stems and cut into pieces.
- Cook the broccoli in a little water for a few minutes until al dente.
- Clean the spring onions and cut them into rings.
- Cut the pepper into rings.
- Make a dressing from the lime juice, soy sauce and pepper rings.
- Mix 1 spring onion and the dressing into the well-drained broccoli and leave to cool.
- Cook the rice according to the instructions on the packet.
- Coarsely chop the peanuts.
- Fry the rest of the spring onion and half the peanuts in the oil until soft. Mix this into the cooked rice.
- Sprinkle the rest of the peanuts over the broccoli.
