Oriental broccoli salad with peanuts and rice

Oriental broccoli salad with peanuts and rice

260gr vegetables p.p.

Ingredients

2 persons

500 grams broccoli
2 spring onions
piece of red pepper
1 tablespoon lime juice
1 tablespoon reduced-salt soy sauce
150 grams brown rice
50 grams unsalted peanuts
1 tablespoon oil

Preparation

The red pepper, lime juice and soy sauce add an oriental touch to this broccoli salad with peanuts and rice.

  1. Clean the broccoli. Divide the vegetable into small florets. Peel the stems and cut into pieces.
  2. Cook the broccoli in a little water for a few minutes until al dente.
  3. Clean the spring onions and cut them into rings.
  4. Cut the pepper into rings.
  5. Make a dressing from the lime juice, soy sauce and pepper rings.
  6. Mix 1 spring onion and the dressing into the well-drained broccoli and leave to cool.
  7. Cook the rice according to the instructions on the packet.
  8. Coarsely chop the peanuts.
  9. Fry the rest of the spring onion and half the peanuts in the oil until soft. Mix this into the cooked rice.
  10. Sprinkle the rest of the peanuts over the broccoli.
