Broccoli salad

250gr vegetables p.p.
Ingredients
2 persons
1 tablespoon pine nuts |
500g broccoli |
5 olives without seeds |
1 tablespoon oil |
1 tablespoon vinegar |
Preparation
1. Toast the pine nuts in a dry frying pan until golden brown.
2. Clean the broccoli and divide the vegetable into florets. Peel the stems and cut into pieces.
3. Cook the vegetables in little water for a few minutes just until tender.
4. Slice the olives.
5. Make a dressing from the oil with the vinegar and pepper.
6. Drain the broccoli.
7. Spoon the dressing and olives through the still warm vegetables and leave to cool.
8. Sprinkle the pine nuts on top.
Menu suggestion: Delicious with omelette strips and potatoes.
