Olives are small fruits that grow on the olive tree. They can be hard or soft to the touch and green, purple or black in colour. Olives, like peaches and cherries, are stone fruits. Olives can be eaten loose or incorporated into dishes. They give your meal a savoury taste.

Canned or bottled olives can be kept in the fridge for up to a month after opening. Do you have an unopened tin or glass of olives? Then check the best-before date.
How do I know if the olives are no longer good? The olives are mouldy, discoloured or cloudy. You can quickly recognise decay by looking, smelling or tasting. Throw away unopened cans and jars.
Preparation
Olives can be eaten loose or incorporated into dishes. Remove the olives from the glass with a clean spoon or fork. This prevents contamination with bacteria and mould. If necessary, cut the olives into smaller pieces before adding them to a dish.
