Cherries belong to the stone fruits, as do plums. They are related to the rosy family. The flavour can be either sweet or sour. In Belgium, the sweet cherry is called "cherry" and the sour cherry is called "kriek". Sweet cherry varieties come in different colours, such as black purple, bright red, yellow with a red blush and orange-yellow. It is best to store cherries in a cool place. Dutch cherries are in season from June to August.

Preparation & storage

    In a cool place (12-15°C) cherries will keep for 3-4 days, in the fridge up to 2 days.

    Make sure the cherries do not get damp. You can place them on kitchen paper to absorb moisture.

    In the freezer, you can store cherries in a well-sealed plastic bag or container for up to 12 months at at least -18°C.

    How do I know if the cherries are no longer good? The cherries are mouldy or limp. You can recognise decay by looking, smelling or tasting.

    Preparation
    To make compote, jams or for use in cakes, you need to pit the cherries using a sharp knife or a special cherry pitter.

    Watch your clothes, but also your kitchen cupboards! Cherry juice gives difficult-to-remove stains.
