


Sour cherries



The sour cherry is also called morel or kriek. The sour cherry is a stone fruit, like plums. The flesh contains a stony stone. The cherries are actually too sour to eat as they are. However, the cherries are very suitable for further processing. You might know sour cherries from amarene cherries (pickled in sugar syrup) or cherry beer.

In a cool place (12-15°C), sour cherries will keep for 3-4 days, in the fridge for up to 2 days.
Make sure the sour cherries do not get damp. You can place them on kitchen paper to absorb moisture.
In the freezer, you can store sour cherries in a tightly sealed plastic bag or container for up to 12 months at at least -18°C.
How do I know if sour cherries are no longer good? Sour cherries are mouldy or limp. You can recognise decay by looking, smelling or tasting.

To make compote, jam or for use in cakes, you should pit the sour cherries using a sharp knife or a special cherry pitter.
Watch your clothes, but also your kitchen cupboards! Cherry juice gives difficult-to-remove stains.
