

Damson plums


The Damson plum is a very old variety of (blue) mirabelles. They are small, elongated blue plums. The plum is especially suitable for processing because of its somewhat sour but very flavourful skin. Like all other plums, it contains a large stone, which detaches easily. Mirabelles can also be sold juiced or candied.

Storage
Store fresh Damson plums in a cool place. They will then ripen a little more.
Ripe plums can be kept in the fridge for a few days.
How do I know if the plums are no longer good? The plums are mouldy or limp. You can quickly recognise decay by smelling, looking or tasting.

Wash the fruit. Cut the plums open and remove the stone.
