Broccoli with orange dressing

Broccoli with orange dressing

205gr vegetables p.p. & 35gr fruit p.p.

Ingredients

2 persons

1 tbsp oil
½ shallot
400g broccoli
pinch of mustard powder
1 orange

Preparation

1. Chop the piece of shallot very finely.
2. Scrub the orange clean and grate some of the zest.
3. Squeeze 1 half of the orange and cut the flesh of the other half into pieces.
4. Make a dressing from the oil, orange juice, mustard powder, shallot and some grated orange zest.
5. Clean the broccoli and divide the vegetable into florets. Peel the stems and cut them into pieces.
6. Cook the broccoli for 5 minutes just until tender.
7. Spoon the dressing and diced orange through the vegetables and leave to cool.

Menu suggestion: Delicious with lentils and mashed potatoes.
