Broccoli dish with couscous

370gr vegetables p.p.

Ingredients

2 persons

500g broccoli
1 shallot
1 clove garlic
2 tomatoes
200g ham steak
1 tablespoon liquid margarine
1 teaspoon curry without salt
2 tablespoons coconut milk
1/4 stock cube with less salt
120g wholemeal couscous
1 tablespoon oil
ras el hanout without salt

Preparation

A Dutch dish with an Arabic twist; this broccoli dish with couscous is easy to prepare and delicious for dinner.

  1. Clean the broccoli and divide the vegetable into florets. Peel the stems and cut into pieces.
  2. Peel and chop the shallot and garlic.
  3. Wash the tomatoes and cut into pieces.
  4. Cut the meat into thin strips.
  5. Stir-fry the meat in the margarine until brown.
  6. Fry the shallot, garlic and curry.
  7. Add the tomato pieces, broccoli and coconut milk and simmer until tender.
  8. Bring 200 ml of water with the piece of stock cube to the boil.
  9. Put the couscous in a bowl and pour in the stock. Stir well and leave the couscous to soak, covered, for 5 minutes.
  10. Season the couscous with the oil and ras el hanout and serve with the broccoli.
