Broccoli dish with couscous

370gr vegetables p.p.
Ingredients
2 persons
| 500g broccoli |
| 1 shallot |
| 1 clove garlic |
| 2 tomatoes |
| 200g ham steak |
| 1 tablespoon liquid margarine |
| 1 teaspoon curry without salt |
| 2 tablespoons coconut milk |
| 1/4 stock cube with less salt |
| 120g wholemeal couscous |
| 1 tablespoon oil |
| ras el hanout without salt |
Preparation
A Dutch dish with an Arabic twist; this broccoli dish with couscous is easy to prepare and delicious for dinner.
- Clean the broccoli and divide the vegetable into florets. Peel the stems and cut into pieces.
- Peel and chop the shallot and garlic.
- Wash the tomatoes and cut into pieces.
- Cut the meat into thin strips.
- Stir-fry the meat in the margarine until brown.
- Fry the shallot, garlic and curry.
- Add the tomato pieces, broccoli and coconut milk and simmer until tender.
- Bring 200 ml of water with the piece of stock cube to the boil.
- Put the couscous in a bowl and pour in the stock. Stir well and leave the couscous to soak, covered, for 5 minutes.
- Season the couscous with the oil and ras el hanout and serve with the broccoli.
