


Canavia beans (Jack beans)



The canavia bean (also called Jack bean) is a bean plant whose young pods as well as the seeds can be eaten. The pods can grow up to 30 cm long and contain between 15 and 20 snow-white seeds.

The young pods are eaten as vegetables, as are the larger seeds. Do not eat canavia beans raw, but boil them first. In India, the beans are mainly boiled or baked. In Japan, people use the bean in tea.
