


Chayote



Chayote is a pear-shaped, poisonous green fruit with a smooth skin. In some places, it has deep folds. Inside the chayote is a large soft edible seed. It is from the same family as the melon, cucumber and courgette. Picked and eaten unripe, the fruit has the bite of an apple. The flavour is between that of a (cantaloupe) melon and cucumber.

Storage
Preferably store the chaoyte in a cool, dark place. It will then keep for 2, sometimes 3 weeks.
You can keep the chaoyte in the fridge, but this will affect the flavour.
Preparation
You can eat the chayote with or without the peel. Wash the chayote before use and cut into pieces.
Good to know: the flesh discolours quickly without peel. You can easily prevent this with a little lemon juice.
