


Chicory



(Wild) chicory is a plant with beautiful blue flowers. The plant is also known as a road keeper, as it often spreads along roadsides on the roadside. Chicory used to be eaten as a vegetable. Nowadays, we are more familiar with its relatives chicory and endive. Roasted and ground roots are also used as a substitute for coffee.

Storage
Eat chicory immediately after picking.
Prepare
Young leaves, before flowering, can be stewed or eaten raw. For example:
- Raw, in a fresh spring salad.
- In a stew.
- With lamb dishes.
- On a wholemeal sandwich with ham or 30+ cheese.
- In a stir-fry dish with garlic and dried red peppers.
Cleaning
Wash the chicory before use.
