




Chicory





Chicory is related to endive. Chicory is grown in the dark. The cut head can be eaten raw or cooked. Chicory is also known as Brussels sprouts. Chicory used to be very bitter. Today's varieties are milder. Also try the red chicory and radicchio varieties; you've probably seen those purple curled bushes before. Chicory keeps best in the fridge.

Storage
Chicory is best stored in the crisper section of the fridge. Preferably in an open plastic bag. Chicory can be kept in the fridge for 7 to 10 days.
You can also freeze raw chicory. Blanch (= briefly heat) the vegetables for 2-5 minutes before freezing. You can then store the vegetable in the freezer for up to 1 year.
Leftover cooked chicory? You can keep this leftover in a storage container for 2 days in the fridge or 3 months in the freezer.
How can I tell if chicory is no longer good? The chicory is mouldy or discoloured. You can quickly recognise decay by smelling, looking or tasting.
Preparing
Cut off a slice from the bottom and wash the chicory in plenty of water. If necessary, cut the prawn into pieces.
The core used to be quite bitter. Nowadays, the core is not nearly as bitter and you can eat the chicory whole.
