Radicchio

Radicchio belongs to the chicory family. The head is round and small. The head has purple-red leaves and white veins. Radicchio is usually eaten raw. The crisp, firm leaves are tightly packed in the head. The taste is somewhat bitter, like chicory. Radicchio is often found in bags of mixed lettuce.
Preparation & storage
Storage
If you bought fresh radicchio, this vegetable will keep for 7 days in the fridge.
Fresh radicchio can also be frozen. Blanch (heat briefly) the vegetables briefly before freezing. You can then store the vegetable in the freezer for up to 1 year.
How can I tell if radicchio is no longer good? Radicchio becomes mouldy or discoloured. You can quickly recognise this decay by smelling, looking carefully or tasting.
Prepare
Remove the stiff outer leaves. Use the leaves or cut the head into strips.
