Marinated vegetable skewers

630gr vegetables p.p.
Ingredients
2 persons
1 radicchio |
8 cherry tomatoes |
1 fennel |
1 (red) onion |
2 tablespoons oil |
1 courgette |
1 garlic clove |
1/2 lemon |
1/2 red pepper |
Preparation
1. Make a marinade of the chopped garlic, chopped red pepper, juice of half a lemon and oil.
2. Clean the vegetables.
3. Leave the root tips of the fennel and onion on, so the vegetables do not fall apart. Cut the fennel into 8 and the onion into 4 parts.
4. Cut the courgette into thick slices.
5. Cut the radicchio into 4 pieces.
6. Pour the marinade over the vegetables and leave to marinate in a cool place for at least 1 hour.
7. Thread the vegetables onto metal skewers and roast on the barbecue or in a grill pan for 15 minutes until tender and nicely browned.
8. Turn the skewers regularly.
Menu suggestion: Serve with a slice of fish and a baked potato.
