Lemon

A lemon is too sour to eat out of hand. The juice gives dishes and drinks a fresh taste. Moreover, the juice can prevent discolouration of, for instance, apples. The peel is particularly aromatic and can be added to (vegetable) dishes when finely grated. The flesh enhances the flavour of other food and activates the taste buds.

Preparation & storage
Storage
Lemon should preferably be stored outside the fridge, in a cool place (12-15°C) or on the fruit shelf. After picking, they do not ripen and will keep for 1 to 2 weeks.
Do you have half a lemon left over? Then do store them in the fridge. Cover the cut surface with cling film or put the lemon with cut surface on a saucer.
How can I tell if a lemon is no longer good? The lemon will become mouldy, dry out completely or lose its flavour. You can quickly recognise decay by looking, smelling or even tasting.
Preparation
You can use the flesh, juice and zest of the lemon.
Do you want to use the peel? Scrub the lemon peel well under running water before use. Grate only the yellow peel of the lemon. Do not grate the white part underneath, which is bitter.
