The (Indian) lime is related to the lemon and orange and belongs to the citrus fruit (Vine fruit family). Limes are round and smaller than lemons. The skin is thin, fairly smooth and green. The sour and yellow-green flesh is much more fragrant, aromatic and juicy than that of a lemon.

Preparation & storage

    Storage
    The flavour comes out best if you store limes at room temperature. But in the fridge, limes will keep for about 2 weeks.

    You can therefore choose to store the fruit in the fridge and let it come to room temperature before use.

    Do you have half a lime left over? Store these in the fridge too. Cover the cut surface with cling film or put the lime with the cut surface on a saucer.

    How can I tell if a lime is no longer good? The lime will go mouldy or dry out completely. You can quickly recognise decay by looking, smelling or even tasting.

    Preparation
    You can use the flesh, juice and peel of the lime.

    Would you like to use the peel? Scrub the lime peel well under running water before use. Grate only the green rind of the lime. Do not grate the white part underneath as it is bitter.

    Want to use the juice? Cut the lime in half and squeeze the fruit.
