Marinated beets

215gr vegetables p.p.
Ingredients
2 persons
2-3 tablespoons balsamic vinegar |
1 tablespoon oil |
2 teaspoons dill (fresh or frozen) |
400g cooked beetroot |
1 bag (±30g) arugula |
Preparation
Super tasty for a winter supper; these marinated beetroots. Packed with vegetables (215 grams pp!) and easy to make.
1. Make a marinade from the vinegar, oil, some pepper and dill.
2. Strip the skin off the beetroot and shave the beetroot into thin slices.
3. Spoon in the marinade and leave in a cool place for 1 hour.
4. Arrange the rocket in a bowl and spoon the beetroot on top.
Menu suggestion: Delicious with fried tofu strips and mashed potatoes.
