Beetroot salad with tangerine dressing

275gr vegetables p.p. & 60gr fruit p.p.
Ingredients
2 persons
| 1 tablespoon oil |
| 2 mandarins |
| pinch of allspice |
| 400g cooked beetroot |
| 150g (mixed) lettuce or chard |
Preparation
1. Squeeze the tangerines and make a dressing with little pepper, some allspice and the oil.
2. Scrub the skin off the beetroot and dice.
3. Spoon the dressing through the beets.
4. Divide the lettuce over a flat dish and spoon the beetroot on top.
Menu suggestion: Delicious with lentils and potatoes.
