Beets (kroten) are dark red tubers with green leaves with red veins. There are summer and winter beets. Red beetroot was discovered as a nutritious and tasty vegetable as early as the 16th century. The red colour that beetroot has is due to the natural dye betanin it contains.

Preparation & storage

    Storage
    Raw summer beets with foliage will keep in the fridge for about a week. Raw beets without foliage will keep for about 3 days.

    Raw winter beets will keep for several weeks in a cool place (12-15ºC).

    Cooked beets will keep for 2 days in the fridge. Cooked beets can be kept in the freezer for up to 12 months (at a minimum of -18ºC).

    Fresh beets, after blanching (2-3 minutes) can also be kept in the freezer for up to 12 months.

    Preparation
    Remove the leaves from the summer beet and cook for 20 to 25 minutes until tender. Do not throw away the leaves! You can use the leaves for wok cooking.

    The cooking time for winter beetroot is about 2 hours.

    Preferably cook the beets in their skins, as this way they retain the most juice. Also, the skin comes off a lot easier after cooking.

    Boiled beets only need to be peeled and then stewed or briefly reheated in hot water. Boiled beets can also be used in salads.

    Preparation times

    Cooking: summer beets 20 - 25 minutes, winter beets approx. 2 hours
    Microwave oven: 3 - 6 minutes
    Braising: 20 minutes
    Steaming: 25 - 40 minutes
