Red beets

Beets (kroten) are dark red tubers with green leaves with red veins. There are summer and winter beets. Red beetroot was discovered as a nutritious and tasty vegetable as early as the 16th century. The red colour that beetroot has is due to the natural dye betanin it contains.

Preparation & storage
Remove the leaves from the summer beetroot and cook them for 20 to 25 minutes until tender. Do not throw away the leaves! You can use the leaves for wok cooking.
The cooking time for winter beetroot is about 2 hours.
Preferably cook the beets in their skins, as this way they retain the most juice. Also, the skin comes off a lot easier after cooking.
Boiled beets only need to be peeled and then stewed or briefly reheated in hot water. Boiled beets can also be used in salads.
