The turnip, also called turnip or turnip gourd, is a bulbous purple-pink-white tuber the size of a beetroot. This turnip grows underground. The turnip is a true spring vegetable, hence its name. It is often confused with turnip and kohlrabi but these are really different vegetables.

Preparation & storage

    Storage
    Store turnips in a cool place. At 0-4 degrees they will keep for up to three to five months.

    You can also keep them in the fridge for a long time, preferably in a (plastic) bag.

    You can also freeze the turnip; peel and wash them first and then cut them into cubes. Blanch the cubes for 2 minutes and let them cool in ice water. After letting them drain, you can freeze them in a sealed bag.

    Preparing
    Turnips are best peeled and sliced or diced before further processing in a dish. Turnips are ideal in a (bound) soup with some grated cheese and courgette on top or as an addition to a hearty vegetable soup.

    There are also many other recipes with turnips. This turnip is also delicious in a spring stew with some potatoes and turnip greens. Or in a stew with leeks, rosemary and 30+ cheese.

    You can also stir-fry them with peppers, courgette and onion or braise them in oil and chives with potatoes and meat.

    Refrigerator: 1-2 weeks

    Cleaning the turnip

    To clean the turnip, remove the foliage first if necessary. This foliage, by the way, can be eaten as is, but they have a slightly shorter cooking time than the turnips themselves.

    Wash the turnip before use and cut a slice from the top and bottom.
