Red cabbage is one of the main head cabbage crops. It also includes white cabbage, pointed cabbage and savoy cabbage. Red cabbage is one of the oldest types of cabbage. There is summer and winter red cabbage. The blue-red colour of red cabbage is caused by a natural dye. The intensity of red cabbage depends on the variety.

Storage
You can keep red cabbage in the fridge for several weeks. It can also be stored on the fruit rack, but its shelf life will be shorter.
Ready-to-eat (pre-cut) cabbage can be kept in the fridge for a few days, covered with cling film.
Always try to eat cabbage as fresh as possible.
Fresh red cabbage can be kept in the freezer after blanching (2-4 minutes) for up to 12 months.
Cooked red cabbage can be kept in the fridge for 2 days or in the freezer for 3 months.
Preparing
Wash the cabbage and remove the outer leaves. Cut the cabbage into quarters, remove the stalk, wash the pieces and cut or shred them into strips/chunks.
Do not overcook red cabbage. Long cooking loses flavour, texture and vitamins.
Red cabbage retains its colour better if you add lemon juice or vinegar to the water when cooking.
For salads, first pour boiling water over finely chopped red cabbage. The real rawness is then taken off.
