Red cabbage with cranberries

Red cabbage with cranberries

200gr vegetables p.p.

Ingredients

2 persons

1 dl redcurrant juice (bottle)
½ small red cabbage or 400g sliced red cabbage
1 tablespoon sugar
6 cloves
2 bay leaves
20g dried unsweetened cranberries

Preparation

1. Clean and finely shave the red cabbage.
2. Bring the red cabbage to the boil with the berry juice, bay leaves, cloves and dried cranberries.
3. Cook the cabbage for 20-25 minutes until tender.
4. Remove the bay leaves and cloves.
5. Season the red cabbage with some sugar and possibly some vinegar.

Menu suggestion: Delicious with beef roast and mashed potatoes.
