Sweet and sour red cabbage

240gr vegetables p.p.
Ingredients
2 persons
400 g sliced red cabbage |
2 spring onions |
1 - 2 garlic cloves |
1 - 2 cm fresh ginger root |
1 tablespoon red wine vinegar |
1 tablespoon sultanas |
pepper |
1/2 red pepper |
1/2 tablespoon honey |
1 tablespoon olive oil |
Preparation
1. Peel and finely chop the garlic.
2. Peel and finely grate the piece of ginger root.
3. Halve the red pepper, remove the seeds and cut into very thin strips.
4. Heat a tablespoon of olive oil in a pan.
5. Add the garlic, ginger and red pepper and fry for about 1 minute.
6. Add the red cabbage, vinegar, sultanas and honey and stir. Stir-fry for 7-8 minutes until the cabbage is al dente.
Cut the spring onions into thin rings and add them to the mixture in the last minute.
8. Season with freshly ground pepper. Allow the vegetables to finish cooking, covered. Enjoy!
Tip: Delicious with beef steaks and boiled potatoes.
