Red cabbage salad with honey dressing

200gr vegetables p.p. & 35gr fruit p.p.
Ingredients
2 persons
1 tablespoon liquid honey |
piece of red cabbage or 400g sliced red cabbage |
1 small apple |
pinch of cinnamon |
2 tablespoons sultanas |
lemon juice |
Preparation
1. Clean the cabbage and shave or cut it into strips.
2. Bring ½ litre of water to the boil.
3. Put the red cabbage in a colander and pour the boiling water over it. Drain the cabbage.
4. Wash the sultanas.
5. Peel and dice the apple.
6. Make a dressing from the honey, lemon juice, pepper and cinnamon.
7. Mix everything through the cabbage.
Menu suggestion: Delicious with lentils and potatoes.
