Red cabbage salad with orange and mustard

200gr vegetables p.p. & 130gr fruit p.p.
Ingredients
2 persons
½ tablespoon sugar |
2 oranges |
1 teaspoon mustard |
1 - 2 tablespoons vinegar |
1 piece of red cabbage or 400 grams of sliced red cabbage |
1 tablespoon oil |
Preparation
1. Clean the piece of red cabbage or use pre-cut red cabbage.
2. If necessary, remove the thick stalk. Shave the cabbage very finely.
3. Peel the oranges thickly and cut the segments from the skins. Collect the orange juice.
4. Make a dressing from the orange juice, 1 tablespoon water, vinegar, the mustard, some sugar, the oil and some pepper.
5. Mix the dressing into the red cabbage and leave to stand for 1 hour.
6. Mix in the orange pieces.
Menu suggestion: Delicious with vegetarian stir-fry strips and mashed potatoes.
