Savoy cabbage is a dense, dark green variety of cabbage. Savoy cabbage has puckered leaves with curled edges. The leaves have an attractive vein structure. Savoy cabbage is also called pitted or caper cabbage. Savoy cabbage is one of the oldest cabbage varieties in the world. There is yellow and green savoy cabbage. Savoy cabbage has a firm cabbage flavour.

    Savoy cabbage preparation and recipes

    Remove the hard outer leaves and stalk. Wash the cabbage carefully. Cut the cabbage into quarters. Shave or cut the cabbage into fine strips. You can also stuff the leaves, leaving them whole.

    Storing Savoy cabbage

    Savoy cabbage can be stored in the fridge for 2-4 weeks. Store this vegetable in an open plastic bag in the vegetable drawer. Savoy cabbage can be stored outside the fridge, but its shelf life will be shorter.

    You do not have to finish a large head in one go. Halve the head lengthwise and keep the rest in the fridge. Cover the cut surfaces with cling film.

    Leftover raw sliced savoy cabbage? Store the leftovers in a plastic container with a lid on top. Then it will keep for at least 1-2 days.

    Raw savoy cabbage can also be frozen. Blanch for 2 minutes just before freezing. Savoy cabbage can be kept in a tightly sealed plastic bag in the freezer for up to 12 months at a minimum of -18°C.

    Leftover cooked savoy cabbage? You can keep it in the fridge for 2 days or in the freezer for 3 months in a sealed storage container.
