Chinese cabbage

Chinese cabbage originates from northern China. A characteristic feature of Chinese cabbage is that this leafy vegetable lacks the distinct cabbage flavour. The vegetable consists of a light-coloured, elongated head the size of a hearty head of lettuce. Due to its crunchy and slightly sweet taste, Chinese cabbage often does well with children.

Preparation & storage
Storage
Chinese cabbage will keep for up to a week in the fridge. Store this vegetable in an open plastic bag in the vegetable drawer. Chinese cabbage can be kept outside the fridge, but its shelf life will be shorter.
You do not need to use up a large head in one go. Halve the head lengthwise and keep the rest in the fridge. Cover the cut surfaces with cling film.
Leftover sliced cabbage? Store the leftover in a plastic container with a lid on top. Then it will keep for at least 1-2 days.
Cooked Chinese cabbage (blanched for at least 2 minutes) can be stored in a tightly sealed plastic bag in the freezer for up to 12 months at at least -18ºC.
Preparing
Wash the cabbage before use and then cut it into wide or narrow strips.
Choose wide strips for cooking and narrow ones for salad or stir-fry. Drain the cabbage well before using in a salad.
