


Chinese flowering cabbage (Choi Sum)



Choi sum is a Chinese leafy vegetable that, like paksoi, is related to cabbage. It also resembles paksoi, although the stalks are loose and slightly thinner. The flavour also differs; choi sum is spicier and a little mustardy. The stalks are crisp and juicy, but can also be stringy.

Storage
Store choi sum in the fridge. It stays good like this for 2-3 days, wrapped in an open plastic bag. Sliced choi sum can be kept in the fridge for 1 day.
Prepare
You can eat everything from the stems, leaves and flowers of choi sum. Wash the vegetable and cut off a piece from the bottom. Then cut it into pieces and blanch (heat briefly) the stalks if necessary.

Preparation times
Cooking: 5 - 7 minutes (the stems slightly longer than the leaves)

Steaming: approx. 10 minutes
