Green cabbage stew with spicy nuts

Green cabbage stew with spicy nuts

275gr vegetables p.p.

Ingredients

2 persons

600g potatoes
500-600g green cabbage
1 onion
2 tablespoons liquid margarine
50g unsalted almonds or cashews
1 teaspoon smoked paprika
1/2 teaspoon chilli flakes
150ml semi-skimmed milk
nutmeg

Preparation

This Dutch stew with green cabbage gets an Asian touch with the spicy cashew nuts. Packed with vegetables (275 grams pp!), easy and delicious!

  1. Peel the potatoes and boil them in a little water for about 20 minutes.
  2. Clean the green cabbage and cut the vegetables into strips.
  3. Peel and chop the onion.
  4. Heat 1 tablespoon of margarine in a frying pan and fry the onion until translucent.
  5. Add the green cabbage with a splash of water and simmer for 10 minutes.
  6. Heat the rest of the margarine in a non-stick frying pan. In it, fry the almonds with the paprika and chilli flakes until soft.
  7. Let the nuts cool on a plate.
  8. Heat the milk.
  9. Purée the cooked potatoes with the hot milk, pepper and some nutmeg. Stir in the cooked cabbage.
  10. Spoon the almonds on top of the mash.
