Beetroot-lime salad

265gr vegetables p.p.
Ingredients
2 persons
1 lime |
1 tablespoon oil |
1 shallot |
500g cooked beetroot |
Preparation
1. Strip the skin off the beetroot and cut into cubes.
2. Scrub the lime thoroughly. Grate off some of the zest.
3. Squeeze 1 half and slice the other half. Cut the slices in half.
4. Clean the shallot and cut it small.
5. Fry the shallot in the oil until translucent.
6. Deglaze with the lime juice and mix with the beetroot.
7. Add the grated lime zest and some pepper.
8. Garnish the salad with the half slices of lime.
Menu suggestion: Delicious with lentils and potatoes.
