Beetroot salad with cream cheese

225gr vegetables p.p.
Ingredients
2 persons
1 pinch of sugar |
2 tablespoons semi-skimmed yoghurt |
50g corn salad or watercress |
1 tablespoon vinegar |
30g cream cheese light |
400g beetroot |
Preparation
1. Strip the skin off the beets. Cut the beets into narrow strips.
2. Mix the vinegar with the sugar and spoon into the beets.
3. Mix the cheese with the yoghurt.
4. Divide the washed lamb's lettuce between a bowl and spoon the beetroot strips on top. Spoon the cheese mixture on top.
Menu suggestion: Delicious with chickpeas and mashed potatoes.
