Corn salad is from the honeysuckle family, like the herb valerian. Corn salad used to be considered a weed if it occurred in winter cereals. Nowadays, it is grown domestically as a delicious vegetable. The nutty leaves are very tasty. Dishes with corn salad do not need strong seasoning because of this. Corn salad keeps best in the fridge.

    Storage
    You can keep lamb's lettuce in the fridge for a few days. In a plastic bag with holes. But why should you? Using it straight away is actually best and tastiest!

    If lamb's lettuce is offered packed, check the best-before date. Store packaged lamb's lettuce in its original packaging in the fridge. This lettuce is packed under protective atmosphere*.

    *Protective atmosphere: This means that there are the same gases in the packaging as in the air, only in different proportions. This way, products stay good for longer.

    How can I tell if lamb's lettuce is no longer good? The lettuce is mouldy or wilted. You can recognise this decay by smelling, looking or tasting.

    Preparation
    When you buy lamb's lettuce, the roots are still attached. Remove the roots, wash the lettuce in plenty of water and drain.

    Then decide whether to serve it as a salad or to blanch it briefly (= heat up briefly) for a hot dish.

    Refrigerator: 2-3 days

    Corn salad is usually eaten raw. If you want to prepare the lamb's lettuce, stick to these times:
    Cooking: 4 - 6 minutes
    Microwave oven: 5 - 7 minutes
    Braising: 6 - 7 minutes
    Steaming: approx. 10 minutes
