


Purslane



Purslane is a fairly unknown 'forgotten' vegetable. Too bad, because purslane's delicate, sharp, slightly sour flavour fits into numerous dishes. There are 2 varieties: summer purslane and winter purslane. Purslane has bright green, small, diamond-shaped leaves. The stalks are thick, fleshy and sometimes a little pink at the base. Originally, purslane comes from the Far East.

Storage
Purslane will keep for 2 days in the fridge in an open plastic bag.
Purslane can also be frozen, but first blanch for about 2 minutes. It can then be kept in a tightly closed plastic bag or container for up to 12 months at a minimum of -18°C.
You can store leftover cooked purslane in a sealed container in the fridge for 2 days or in the freezer for 3 months.
Preparation
Always handle purslane with care. The leaves bruise quickly and lose their crispness.
Do not remove bunches of purslane until you have cut off the roots. Wash purslane carefully in plenty of cold water and drain well.
Winter purslane is especially suitable to be processed (raw) in stews and salads.
Summer purslane is especially suitable for cooking. Summer purslane has a more robust structure, the leaves and stems are meatier.
